Hi guys so today I have a new recipe to share which supports milk production in nursing moms! A great lactation cookie guys, seriously! I was looking for some nutritious yet tasty cookies or snaks to support nursing and, while I did find some available for sale on various websites and at the stores... They were all very expensive and not exactly what I was looking for as far as a healthy, breastfeeding cookie. So I came up with this recipe the other day while I was playing around with ingredients. These cookies have a chewy texture and are fenugreek free because I never liked the side effects of fenugreek to increase milk supply.
Peanut Butter Oatmeal Chocolate Chip Nursing Cookie Recipe-
-1/2c. milk (any type you have on hand will work, I used 1%)
-3 eggs
-2 t. vanilla
-1 stick of butter, melted
-3/4c. sugar
-1/3c. oil
-1/2 t. salt
-2 t. baking powder
-dash of cinnamon and nutmeg
Mix all of the above ingredients together first
Now add:
-3c. oats
-3/4c. peanut butter (I used Jif creamy- use any type you have)
-3/4c. chocolate chips (I used Ghiridelli- yummm)
-1c. raisins
-1/3c. brewers yaest
-1/3c. flaxseed meal (I like Badia)
-3c. flour (I used 2c. unbleached flour and 1c. almond flour- use whatever you like though!)
Mix all ingredients together thoroughly and scoop out with an ice cream scoop, for even cookie size. Bake at 350 degrees for 14-16 minutes. Checking the bottom of the cookie to see a nice golden brown. And lastly, enjoy these amazing breastfeeding support cookies! It can be hard to be a milky mama ^-^ and it is very nice to have an easy snack for on the go or even have a couple of these for a quick breaskfast! These cookies don't break the bank and they have all the right things to help you on your nursing journey!
