Hey guys I have an awesome, moist pacake recipe that happens to be gluten free! So I want to share it with ya'll because I have a son who is gluten intolerant and he needs gluten free foods. 

At times it can be really difficult to find a good gluten free alternative to certain foods. For us pancakes were one of those foods that we just could not find a good gluten free variety of. 

This GF pancake recipe focuses on white corn meal as the base. Its yummy, minimally processed and considerably better for you than starch. 

>As a personal side note... It was a complete shock to see that so many of the extremely high priced gluten free bread items in the store are starch based as their first ingredient.  Cornstarch is so cheap and kimda gross if I am being honest. Like why? It offers practically zero nutrition and tastes like garbage. It is so refined and processed. Straight carbohydrates. It was always used a thickener in foods I have ever prepared and recipes I have ever made.  So to start off the recipe I gather all of the items I will need and get a good frying pan out for range cooking.< Okay it turned out to be more of a rant and less of a side note but, ya know...

Let's get to it:

Okay I am going to start off by talking for a sec about the choice of oils/fats to fry these babies in. My best result was with straight butter. Salted or unsalted, it does not matter. I do in fact have a dairy free child too, though, and thought to try my Country Crock vegan spread stick for his panakes.  I had a harder time keeping those guys together when frying and flipping them. Okay, so with that out of the way...  You CAN make these gluten free and dairy free but they may fall apart a bit more if you go that route with it. I have yet to try other oils /fats for the frying part. 

Mom's Best Yet Gluten Free Pancakes recipe   >^-^<

3T. applesauce

1  1/2 T. oil

1 banana

2 eggs

1  1/2 T. sugar

1t. baking powder

3/4c. white corn meal

1c. water

1t. vanilla

dash of cinnamon

dash of salt

Mash up your banana first thing. Add applesauce, oil, eggs, sugar and vanilla to that. Mix well to incorporate. 

Add in the cup of water. Mix.

Add your baking powder, salt, cinnamon and finally your corn meal to the mixture. 

Use a good sized whisk and get your batter nice and fluid but still somewhat thick and goopy. Now you are ready to make some nice pan cakes! 

Set your frying pan to medium heat and using an oil or fat of some sort, I used butter for some and vegan spread for others. I loved the texture and fluffiness of the ones I made using butter in the pan. I use a 1/4 cup or 1/3 cup measuring cup to grab a scoop of batter and plop in there.

This recipe makes about 6-9 pancakes depending on the size of the cakes you make. It can be doubled or tripled easily, depending on how many cakes you are looking for!
